When I was a kid, we had a large rhubarb bush in our backyard. Normally we’d cut off some in the Spring, but really it can be picked all throughout the year. When I was young, I was made very much aware that even though rhubarb is delicious, the leaves are toxic and can make you very much sick. Often times I would grab a stalk, wash it off, sprinkle liberally with sugar and eat out straight up.
So don’t be afraid of this wonderful little vegetable. Go get some, prep it, cook it, enjoy it. As far as recipes are concerned, you really cannot go wrong blending it with strawberries and making a tasty pie. Here are a few links that I’d like to suggest you go visit:
